PCBs, depending on complexity, layers, and quality required: if you are 
looking for a local shop, Huntsbury Circuits in Christchurch for jobs up 
to double-sided from memory, but if you have really fine structures 
check with them first whether they want to do it.

Assembly: Electronics Layout and Fabrication (ELF) have been very good 
on a number of small projects (half a dozen up to several dozen units) 
we had to get done over the years. They are on 422 St Asaph St, email 
used to be elflet at xtra.co.nz  They do SMT (it helps if you have a 
stencil obviously) and manual soldering, plus whatever QC / testing is 
required. I've always found their quality excellent.

And then there's Assembly Specialists http://asltd.co.nz/home/ - I don't 
have any personal experience with them but have heard them being 
mentioned by others.

And I am neither affiliated with either of them, nor do I have any 
financial or other business interest in any of them...
