[chbot] IP cam, open source software, PTZ, joystick control

There are all kinds of software options open source and then lots of varying levels of proprietary solutions. 

I will suggest this as no one has mentioned it yet. Security Spy is software which runs on macOS it is proprietary but it works with all kinds of cameras on the market. It has a complete GUI for almost everything you can think of doing including scripting and notifications on motion in areas etc (have you considered a wide angle 180 degree camera so you can zoom with software rather than moving the camera. Depends if the resolution is high enough, network is up to the bit rate and also if you do not need a zoom lens with PTZ. 

Also, one thing I will suggest is that if you are at some point going to install a lot of cameras then a decentralised solution may be worth considering (where the image analysis is happening more on the camera rather than a central system). Also, I would suggest that maybe a few smart phones with wireless could be workable webcams as can (well web cams connected with USB to a machine). You could then use tripods or claps to mount the cameras on the various things you need to keep an eye on. This approach means you can say set something to look at a temperature sensor readout or something along those lines.
