Hi,

I've just had a play with a Digilent ChipKit Uno32 
(http://www.digilentinc.com/Products/Detail.cfm?Prod=CHIPKIT-UNO32). In 
a word "Very nice".

At first glance It looks like an Arduino, but is a PIC32 MX320F128H with 
128KB Flash, 16KB RAM, with 42 I/O pins, and up to 80MHz clock. The 
development environment is a modified version of Arduino-0023.

If an Arduino is too small, have a look at this. There is also a MAX 
version with for $57 with 512KB flash and 128KB RAM, and 83 I/O pins.
