I have not had any direct experience with these but see them advertised in Race Engine Technology magazine for combustion analysis and cylinder pressure measuring.

A company called Kistler is one that comes to mind.

This is a mature technology so I would expect them to be able to answer any questions you have to see if it possible to use their sensor for your purpose.
