I've rewound many mains transformers. Even changed the voltage on a 5KVA 3
phase one. It's not difficult.

One tip, when you switch it on for the first time, use a 100 watt or so
incandescent bulb in the line. That way if these is a fault, the bulb just
glows. 

Some microwaves have E and I plates that are not interleaved. In this case,
all you do is cut the weld with an angle grinder, split the parts and it is
then easy to access the core.
